Spinach Quesadillas

Spinach Quesadillas

SERVES 4 PREP 10 minutes  COOK 10 minutes COST $1.50 a serve


250g packet frozen chopped
spinach, thawed
1½ cups grated tasty cheese
1 green onion, finely chopped
¼ cup shredded basil
4 x 20cm flour tortillas
Cooking oil spray
¼ cup small basil leaves


1 Using hands, squeeze excess liquid  from spinach. Combine spinach, cheese,  onion and basil in a bowl. Season.
2 Place 2 tortillas on a flat work surface.  Top with spinach mixture, then  remaining tortillas. Spray both sides of  tortillas with oil.
3 Heat a large frying pan over moderate  heat. Cook each quesadilla for 2 minutes.  Turn and cook for a further 2 minutes or  until golden and heated. Transfer to a  chopping board. Cut into wedges. Serve  topped with basil leaves.
