Fried Onion Rings

SERVES 4 PREP 10 minutes  COOK 15 minutes COST 70¢ a serve

INGREDIENTS

2 green onions, green part only,
cut into thin strips
1 cup rice flour
1 cup chilled soda water
Rice bran oil, to deep-fry
1 large brown onion, cut into 1cm
rings, rings separated
1 large red onion, cut into 1cm rings,
rings separated

METHOD

1 Place green onion in a bowl of iced  water. Chill for 15 minutes or until onion  curls. Drain; pat dry on paper towel.
2 Meanwhile, combine flour and soda  water in a bowl. Heat enough oil in  a large saucepan to reach a depth of  5cm (oil is ready when a cube of bread  crisps quickly without absorbing any oil).  Dip onion rings into batter, allowing any  excess to drip off. Cook the onion rings,  in batches, for 2 minutes or until golden.  Drain on paper towel.
3 Serve onion rings topped with  green onion curls.
