SERVES 4 PREP 5 minutes + cooling COOK 5 minutes COST $1.95 a serve
✛¼ cup caster sugar ✛2 green kiwifruit,
chopped ✛2 cups thick vanilla yoghurt
✛1 small red-skinned apple, unpeeled, cored,
chopped ✛1 golden kiwifruit, peeled, chopped
Combine the caster sugar and 2 tablespoons
water in a small saucepan over low heat.
Cook and stir for 2 minutes or until the sugar
dissolves. Increase heat to high; bring to the
boil. Remove from heat. Cool for 10 minutes.
Blend sugar syrup and green kiwifruit until
almost smooth. Spoon yoghurt into serving
bowls. Swirl through kiwifruit coulis. Serve
topped with apple and golden kiwifruit.
